Here's a healthy and flavorful Chicken Enchiladas recipe that avoids frying and heavy creams but still delivers on taste.

Chicken Enchiladas
Ingredients (Serves 4-6)
For the filling:
2 cups cooked, shredded chicken breast
1 cup black beans (optional)
1 cup corn (optional)
1 small onion, diced
1 bell pepper, diced (red or green)
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
½ teaspoon smoked paprika
½ teaspoon salt
½ teaspoon black pepper
½ cup low-fat Greek yogurt or sour cream
½ cup shredded cheese (Mexican blend or cheddar)
For the enchilada sauce:
1 (15 oz) can tomato sauce
1 teaspoon cumin
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon apple cider vinegar (optional, for tang)
Other ingredients:
8 small whole wheat or corn tortillas
½ cup shredded cheese (for topping)
Fresh cilantro (for garnish)
Instructions:
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Prepare the filling:
In a skillet over medium heat, sauté the onion and bell pepper for 3-4 minutes.
Add garlic, chili powder, cumin, paprika, salt, and pepper, and cook for 1 more minute.
Stir in shredded chicken, black beans, corn, and Greek yogurt. Remove from heat and mix in ½ cup shredded cheese.
Make the sauce:
In a saucepan over medium heat, combine all sauce ingredients.
Simmer for 5 minutes, stirring occasionally.
Assemble the enchiladas:
Spread a thin layer of sauce in the baking dish.
Fill each tortilla with 2-3 tablespoons of chicken mixture, roll tightly, and place seam-side down in the dish.
Pour remaining sauce over the top and sprinkle with cheese.
Bake for 20-25 minutes until cheese is melted and bubbly.
Garnish with fresh cilantro and serve with avocado slices or a squeeze of lime.
