Chicken Enchiladas


Ingredients (Serves 4-6)

For the filling:

  • 2 cups cooked, shredded chicken breast

  • 1 cup black beans (optional)

  • 1 cup corn (optional)

  • 1 small onion, diced

  • 1 bell pepper, diced (red or green)

  • 2 cloves garlic, minced

  • 1 teaspoon chili powder

  • 1 teaspoon cumin

  • ½ teaspoon smoked paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ cup low-fat Greek yogurt or sour cream

  • ½ cup shredded cheese (Mexican blend or cheddar)

For the enchilada sauce:

  • 1 (15 oz) can tomato sauce

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon smoked paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 teaspoon apple cider vinegar (optional, for tang)

Other ingredients:

  • 8 small whole wheat or corn tortillas

  • ½ cup shredded cheese (for topping)

  • Fresh cilantro (for garnish)


Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  2. Prepare the filling:

    • In a skillet over medium heat, sauté the onion and bell pepper for 3-4 minutes.

    • Add garlic, chili powder, cumin, paprika, salt, and pepper, and cook for 1 more minute.

    • Stir in shredded chicken, black beans, corn, and Greek yogurt. Remove from heat and mix in ½ cup shredded cheese.

  3. Make the sauce:

    • In a saucepan over medium heat, combine all sauce ingredients.

    • Simmer for 5 minutes, stirring occasionally.

  4. Assemble the enchiladas:

    • Spread a thin layer of sauce in the baking dish.

    • Fill each tortilla with 2-3 tablespoons of chicken mixture, roll tightly, and place seam-side down in the dish.

    • Pour remaining sauce over the top and sprinkle with cheese.

  5. Bake for 20-25 minutes until cheese is melted and bubbly.

  6. Garnish with fresh cilantro and serve with avocado slices or a squeeze of lime.
